What does one knit with 60" circulars? A sleeping bag? A suitcase cozy?

afghans or blankets -- knit back and forth, not in a tube. With that many stitches, it's a lot easier to handle one flexible needle than a pair of long straight sticks.

The moebii are also easier on super long circulars -- most of the ones I've done have been on 60". Figure you need to make 2 circles and have it still flexible.
